School Lunch à la Chef
We are very proud to say that our school lunches are probably the healthiest—and most delicious—in Lamoille County, thanks to Heather Gentle. Before Mrs. Gentle joined the Bishop Marshall School to head up our kitchen, she worked as a chef at the Harvest Market in Stowe. Made from scratch, her lunches are as popular as Mrs. Gentle herself, teaching students to make better food choices.

A typical meal plan for the week might look like this:

  • Monday: Homemade macaroni and cheese – fresh veggies – fruit – milk
  • Tuesday: Turkey club wrap with chips – veggie sticks – cinnamon apples – milk
  • Wednesday: Cheese quesadilla with refried beans and salsa – corn – peaches – milk
  • Thursday: Pasta with chicken and spinach pesto– green salad – fresh fruit – milk
  • Friday: Meatball subs – Caesar salad – cinnamon apples – milk

A 2008 study by preventive cardiologist Dr. Arthur Agatston and his team found that elementary-school students who ate nutritionally sound, high-quality breakfasts, lunches and snacks—instead of the typical cafeteria food—not only had lower blood pressure and were less likely to be overweight, they also scored significantly better on standardized tests, especially in mathematics.
